It’s made of soft yeast dough rolled around a sweet, nutty filling and often finished with a glossy chocolate glaze like in your photo.
Here’s a classic recipe for the chocolate-glazed walnut version:

🧁 Ingredients
For the dough:
500 g all-purpose flour
250 g butter (cold, diced)
100 g powdered sugar
25 g fresh yeast (or 7 g dry yeast)
100 ml milk (lukewarm)
2 egg yolks
1 tsp vanilla sugar
pinch of salt
For the walnut filling:
250 g ground walnuts
120 g sugar
100 ml milk
1 tsp cinnamon
1 tsp grated lemon zest
1 tsp rum (optional)
For brushing:
1 egg yolk (for the first layer)
1 egg white (for the second layer)
For the chocolate glaze:
100 g dark chocolate
1 Tbsp butter
1 Tbsp milk
(optional) drizzle of white chocolate for decoration
👩🍳 Directions
- Prepare the dough:
Dissolve yeast in lukewarm milk with a bit of sugar and let stand for 10 minutes.
In a large bowl, mix flour, powdered sugar, salt, vanilla sugar, and butter until crumbly.
Add yeast mixture and egg yolks. Knead until smooth.
Divide into 2 balls, wrap, and chill for about 1 hour.
- Make the filling:
Heat milk with sugar until sugar dissolves.
Stir in ground walnuts, cinnamon, and lemon zest. Let cool completely.
- Assemble the rolls:
Roll out each dough portion into a rectangle (about 0.5 cm thick).
Spread the walnut filling evenly, leaving a small edge.
Roll up tightly from the long side, tuck in the ends, and place on a parchment-lined tray seam-side down.
- Brush & rest:
Brush rolls first with beaten egg yolk. Let dry for 30 minutes.
Then brush with egg white and let dry another 30 minutes (this gives the traditional marbled crust).
- Bake:
Preheat oven to 180 °C (350 °F).
Bake for 30–35 minutes, until golden brown. Cool completely before glazing.
- Add the chocolate glaze:
Melt dark chocolate with butter and milk until smooth.
Pour over the cooled rolls and, if desired, drizzle melted white chocolate in lines for decoration.
Let the glaze set before slicing.
